that is chicory..my grandmother used to pick it for the flowers and dig the roots and dry them, grind them up for a coffee substitute.

I believe that used chicory in the war instead of coffee. I only know the vegetable chicory which we can eat in a salad or cook, originally from Belgium.

The chicory I know is a veg, long and pointy and usually grows in the dark to keep it from turning green. I assume this is what happens when you let it grow normally.
