FOWC with Fandango: Portion

This evening I am serving fish with potatoes and a chicory salad. Nothing breathtaking or unusual. In our country you generally serve fish with steamed potatoes, and not chips/fries as it would be in my home country of England. So I have some work with peeling the potatoes, or do I? I do not alwas peel the potatoes if I am alone. I just give them a wash (somtimes) and cut them in pieces. However, son No 1 is also eating this evening, so I usually peel them. Actually I read somewhere that unpeeled potatoes are healthier as there are many nutrients in the skins, so tonight I have decided not to peel the portatoes. Just cut them in smaller pieces. I have my own system of cooking postatoes. I put them in the micro wave for ten minutes with no extra water, as the potatoes do have enough moisture and the water also washes the vitamines away.

We still have the Winter potatoes, but soon we will have the Spring potatoes which have a finer skin. I wonder if my new cooking method will have a good resuilt. I must be getting lazy in my old age.
