They are quite versatile in shape and colour

It is a basidiocarp, which is a fungal sporulating structure. It is an indication that the interior of the tree trunk is decaying.

The tree is still standing, but the top part has been removed

That is normal. Trees decay as they die back. The top is probably gone now because it died. Decay is dispersing through the main trunk and limbs.

No; horticulture. Of course, horticulturists need to study a bit of other sciences too.

I admire those toadstools, but they worry me because many of them are lethal to animals, especially dogs and cats, so whenever i see them I try to chop them up to make them less attractive.

They always appear in Autumn, but I have not seen any animals sniffing around them up to now. There are some interesting shapes and sizes.
