A piece of Swiss cheese, finely grated
Mixed with two eggs, very well mated
A little flour to thicken the mixture
Poured in a pastry, to give it a fixture
Then in the oven for thirty minutes
Do not let it burn, stay in the limits
Served with a dish of vegetable soup of course
A family approval, the dish to endorse
That sounds like a recipe I could manage. It actually sounds very good. Any special spices requires or just a pasty crust and baking?

I had some pepper from the pepper mill. I find that cheese is salty enough according to what sort you use, otherwise you can add some salt, and perhaps a little chilli. It is really a flexible dish. I forgot to say you have to add some milk with the eggs, although I prefer cream.

Yum! I had a recipe to make three quiches and my friend and I in TX would get together make a bunch and freeze.

Ooh — I could endorse that! I think my mother used to make something similar, with a little nutmeg mixed in!

They are not frozen, just normal rolled out pastry.
